This is a recipe that I have adapted from a zuccini-nut bread. Thus, should you not have a Jack O'Lantern to carve or would like to bake the bread at other times of year, the pumpkin can be replaced with zuccini/squash, the long green one unpeeled.
When you have removed the sticky park with the pumpkin seeds, your pumpkin may still be a little to thick for carving. The "proper" flesh that you scrape away to thin the sides along with whatever flesh is under the rind cut out when you make your lantern decoration can be grated into this recipe.
3 eggs
1 cup canola oil
2 cups sugar
2 cups coarsely grated pumpkin flesh/(zuccini)
2 cups all purpose flour (or replace 1 cup with whole wheat)
1/4 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp vanilla sugar
3 tsp ground cinnamon
1 cup coarsely chopped walnuts
Mix in the order of the recipe. Flour, soda, baking powder, salt, and spices are mixed before added to the mixture. Pour into a 12" x 18" or so pan and bake for one hour at 400F/200C.
Supposedly, the bread can last for months in a well closed container. I have had this recipe for almost 30 years but have yet to experience that - it seems to disappear quite quickly.
